A NEW market selling produce that is "local, organic or both" launches in Saffron Walden town centre tomorrow (Saturday August 8).

Stalls will be in Butcher Row, which runs behind the Town Hall from Market Street to Market Row, and will be open for business from 8.30pm am to 3.30pm.

Liz Goddard, who already runs a home delivery local vegetable box service, will run the market. She has been appointed the market manager for Saffron Walden Community Interest Company (SWCIC), a not-for-private-profit organisation behind the Walden Local Food Project.

Ms Goddard has been tracking down further top quality local suppliers for weeks.

"Our slogan is 'it's local, organic or both' and I've been delighted to discover that a very great deal of what we sell can be both and will be grown just a few miles from Saffron Walden. Everything we sell will be labelled with where it comes from and whether it is local, organic or both," she said.

'We will obtain food from whichever suppliers have seasonal produce and the balance of local and organic choices will change with the seasons.

"Shoppers will be able to buy the exact quantity they need to avoid the waste of being forced to buy more than you can eat in a super-market pre-pack."

SWCIC plans that the market will not just become a permanent, economically viable, way to help get local and sustainably produced food to local consumers - it hopes to make a profit.

Paul Garland, one of the company's directors, said: 'The profits will not go to shareholders but will be used to encourage the production of more food for local consumption by farmers and smallholders.

"We are very grateful to our supporters some of whom will help man the market stall as volunteers. This way we can keep costs and prices low while making a real contribution to increasing the amount of food grown locally."
